Super easy #MeatlessMonday meal idea for the reluctant cooks

Saute 1 small onion (diced) and 1/2 cup sun dried tomatoes(olive oil packed) for about 2 minutes. Add 2/3 cup frozen green peas and 1 packet Seeds of Change quinoa&brown rice blend. The grain has already been cooked, but just break up the bits when it’s still in the package ( other wise it’s clumpy) before adding to the pan. Heat through and ta-da! A delicious one pan meal with about 12 grams of protein and 6 grams of fiber per serving!
